5 easy yet delicious meals to cook on your self catering holiday

When on holiday, we all love to indulge in different cuisines and tasty meals but sometimes you might just want to kick back with a glass of wine, enjoy the views and relaxing atmosphere whilst feasting on a delicious home cooked meal. Therefore, we thought we would provide you with 5 easy meals for you to cook in your apartment, with minimal ingredients and a flavorful outcome.

Chicken Fajitas


  • Main Ingredients; 500g Chicken, 1 Pepper, 1 Onion, Fajita Seasoning, Tortilla Wraps
  • Added Extras; Cheese, Lettuce, Salsa
  1. Roughly chop the chicken, pepper and onion.
  2. Fry off chicken for approximately 5 minutes.
  3. Add peppers and onions and fry for further 2 minutes.
  4. Sprinkle on the fajita seasoning and cook for further 3 minutes.
  5. Warm tortilla wraps in microwave for 30 seconds.
  6. Assemble you fajita the way you like it!

Prawn Linguine


  • Main Ingredients; 24 raw king prawns, linguine pasta, 1 large chilli, 2 garlic cloves, 12 cherry tomatoes, basil
  • Added Extras; Olive oil, Sugar snap peas, fresh salad leaves, crusty white bread
  1. Cook the linguine for recommended amount of time
  2. Heat the oil; fry chilli and garlic for 30 seconds
  3. Add the prawns and fry for further 3 minutes until pink
  4. Add tomatoes and cook for further 3 minutes; stirring occasionally
  5. Drain pasta, add the contents of frying pan and stir
  6. Tear in basil leaves and season


Stuffed Peppers


  • Main Ingredients; 1 large pepper per person, 250g mince meat (for 2), 1 can of tomatoes, 1 onion, 1 chilli, 1 garlic glove, cheeses
  • Added Extras; Cous cous or rice, bread
  1. Cut peppers in half and put in the oven for 10 minutes
  2. Chop onion into small pieces
  3. Fry the mince meat, adding chilli and garlic
  4. Once cooked add tomatoes and stir
  5. Fill the peppers with content of the frying pan and add grated cheese
  6. Grill for approximately 5 minutes and serve with cous cous, rice or bread

Homemade meatballs


  • Main ingredients; 250g mince meat, 1 onion, garlic, chilli, 1 egg, 1 tin of chopped tomatoes
  • Added Extras; Spaghetti, jacket potato or rice
  1. Chop onion into small pieces
  2. Mix the meat, onion, garlic, chilli and egg into a bowl
  3. Roll into balls
  4. Fry for 15 minutes or cook in the over for 20 minutes
  5. Add chopped tomatoes into meatballs
  6. Serve with either spaghetti, rice or jacket potato

Chicken and vegetable curry


  • Main Ingredients; 500g Chicken (per-marinated if you haven’t got spices), 1 onion, 1 pepper, pack of button mushrooms, 1 can of tinned tomatoes, garlic, chilli powder.
  • Added Extras; Chickpeas, extra spices, rice, chapatis, naan.
  1. Chop the vegetables into size of your choice
  2. Fry onions for approximately 2 minutes
  3. Add marinated chicken and cook for further 5 minutes
  4. Add rest of veg and cook for 5 minutes
  5. Once happy, add tomatoes and season to taste (chilli powder)
  6. Serve with your favourite Indian sides
